Rice Paper Spinach mini Quiche
This quiche is the Rice Paper version if you prefer the look and feel of the crust but still gluten free.
A combination of 10 minutes work and using only 1 bowl, you will have healthy & gluten free quiche.
Ingredients:
1/2 medium dice onion
2 large egg
200gr Feta cheese
200gr Fage 5% greek yogurt
120gr Mozzarela cheese
1 bag of 10oz spinach
Mint leaves- optional
about 15 large brown or white rice papers

Preheat oven to 350 degrees. Prepare baking pan with parchement paper and set aside.
In a big bowl mix together with a wooden spoon, diced onion, eggs, feta cheese, greek yogurt and mozzarela cheese.
Chop the spinach and mint leaves and add into the mix. Mix well.

Soak one rice paper in a water bath (big pan filled with water) for a few minutes until it soft, place a spoon of the mix in the middle and fold the rice paper to a rectangle shape. Repeat until you finish the mix.
Bake for 20-25 minutes.
