healthy apple carrot muffins

Healthy Apple Carrot Muffins

1 cup whole wheat flour or spelt flour

1tsp baking soda

1/2tsp cinnamon

1 egg

3tbs olive oil

1tsp vanilla extract

1/4 cup maple syrup

1 grated carrot

1 grated apple

dash of salt

1/4 cup chocolate chips or crushed nuts

Pre heat the over to 350F.

In a big bowl, mix the flour, baking soda and cinnamon.

Add the egg, oil, vanilla and maple syrup and mix well.

Add the salt, grated apple and carrot and mix well.

Add the chocolate chips and mix.

Place in a muffin baking pan and bake 12-15 minutes.
