Healthy “Chocolate” Bites
Ingredients for the base:
1 cup unsalted nut mix
1 1/2 cups Medjool dates
1/4 cup unsweet cacao powder
Ingredients for the chocolate ganache:
1/2 cup chocolate (any type you like)
1/2 cup heavy whipping cream
Place parchment paper in a 9X6in plastic container and set aside.
In a high-speed food processor, add the nut mix, dates and cacao powder and blend well to a dough. Transfer the dough to the plastic container and flatten to an even layer.
Making the chocolate ganache: in a microwave safe bowl, melt together the chocolate and the heavy whipping cream in a 30 seconds pulse to a sooth, shiny mix. Cover the nuts base with the chocolate ganache and place in the freezer for at least an hour until firm.
Take it out of the freezer, with a chef knife, cut it into cubes of finger shape and enjoy.
Keep in the freezer for 3 months.
