healthy banana pancakes

We all have riped bananas in our house from time to time, right?

And we all ask our selfes:

"what can we do with them?" "I feel bad throuwing them to the trash"

I always looking for easy recipes that I can make quickly and as a bonus this recipe is also healthy.

Here you have a healthy recipe foe sweet Pancakes with only 3 ingredients. No sugar added and GF & Vegan.

I started to add the Healthy Banana Pancakes to my baking classes and workshops for kids and adults and it became a hit and a very healthy popular class.

Healthy Banana Pancakes

5 eggs

5 bananas

1tsp cinnamon


Separate the eggs into 2 bowls: one with egg whites and one with egg yolks.

In a separate bowl mash the bananas.

With a hand mixer, whisk the egg whites to a firm white foam.

Add the egg yolks and the cinnamon to the mashed bananas and mix well.

Gently fold the egg whites foam into the banana mix.

Heat oil in a sauté pan over medium heat and cook small scoops from the mix, about 4 minutes on each side and serve hot.
