green pasta

My kids are very picky with their food.

When my oldest was 3 years old (now she is 12) we were at a friend house and she made Green Pasta. We called it Green Pasta as a marketing move so the kids will eat it, and it worked!

Ever since, I am making this pasta and everyone is happy :)

I modified my friend recipe a bit (well, I have to add something....)

I also started to add the Green Pasta to my baking classes and workshops for kids and adults and it became a hit and a very popular class.

Green Pasta

1 package of fresh basil

3tbs pine nuts

1tsp salt

1/2 cup olive oil

1tbs crushed garlic

80gr parmesan

1 box of pasta

 

In a large pot of boiling salted water, cook the pasta according to package instructions. Reserve 1/4 cup pasta water then drain.

In a food processor put all the pesto ingredients and mix for at least 2min until you have a green paste.

 

In a large serving bowl put the reserved 1/4 cup of pasta water, the drained pasta and the pesto sauce. Mix well and eat :)
