healthy israeli burekas

I am always looking for yummy healthy version for food and desserts that I like.

In this Burekas, I made the dough from sweet potatoes that are healthy and sweet. I used gluten free flour and tapioca flour to keep the Burekas gluten free. You can use spelt flout instead.

I added some spices and herbs to the dough and it turn out perfect! The dough is without oil, butter or eggs so it also can use as a vegan dish.

The best part is that you can make any filling that you want.

Healthy Burekas

4 medium sweet potatoes

1 cup gluten free flour

3/4 cup tapioca flour

salt, pepper

fresh or dried herbs- basil, oregano, thyme, mint

 Feta cheese

 shredded mozzarella cheese

 Sour Cream

1 egg

Sesame (white or black or both)

In a microwave safe plate, place the sweet potatoes in the microwave for 6 minutes.
After 6 minutes, turn them and heat for another 6 minutes until they soft.
Cut the sweet potatoes to half and peel. Mash the soft, peeled sweet potatoes with a fork. Add salt, pepper and other spices of your choice. Add both flours and mix with your hands to a soft dough. If the dough is too sticky, add 1tbs of gluten free flour. Roll the dough between 2 parchment papers to a 1 inch thickness. Place to rolled dough in the fridge while making the cheese mix.

In a medium bowl, put a big spoon of sour cream, add some mozzarella and feta cheese. Add salt and pepper and herbs (fresh or dried) of your choice and mix well.

Preheat oven to 375 degrees.

Take the dough out of the fridge and create round circles with a 4" round cookie cutter. Place the round circles on a baking pan with parchment paper, place 1tsp of cheese mix in the middle of each round, fold into half and close well with a fork. Egg brush each burekas and sprinkle sesame on top. Bake for 20-25 minutes.
