Apple Carrot Cookies

1 cup almond flour

1cup oatmeal (for a gluten free version, you can use GF oatmeal)

1tsp baking soda

1/2tsp cinnamon

1 egg

3tbs olive oil

1tsp vanilla extract

1/2 cup brown sugar

1 graded carrot

1 graded apple

das of salt

1/4 cup chocolate chips or crushed nuts

Pre heat the over to 350F.

In a big bowl, mix together the almond flour, oatmeal, baking soda and cinnamon.

Add the egg, oil, vanilla and sugar and mix well.

Add the salt, graded apple and carrot and mix well. Add the chocolate chips and mix.

Scoop round balls on a baking pan with parchment paper and bake 12-15 minutes.
