zucchini quiche

I LOVE quiches!

You know those days when your fridge is empty and all is left are ingredients that has nothing to do with each other?

And on top of that, hungry kids....

This is what happend to me and I needed to think fast and to work with what I have (not much....)

I made this quiche out of the leftovers I had at home and it was eaten in less than an hour!

Either it turned out amazing or my family was very hungry..... 

I started to add the Zucchini Quiche to my baking classes and workshops for kids and adults and it became a hit and a very healthy popular class.

Zucchini Quiche

3 graded zucchini

1 medium onion

1 tbs almond flour

3 large egg

230gr 5% Fage cheese

200gr (2 cups) shredded mozzarella cheese

1/2 - 1/3 cup parmesan cheese

Sesame (white or black or both) optional

Preheat oven to 360 degrees. Spray a quiche dish with cooking spray, then set aside.

Dice the onion with a chef knife, heat oil in a sauté pan over medium heat and cook the onions until cooked through and caramelized - about 10 minutes.

In a big bowl, whisk eggs, almond flour, fage cheese, mozzarella cheese and parmesan together. Add the onion and mix.

Drain all the water from the graded zucchini and add to the bowl. Mix well and pour the mixture into the prepared quiche dish, sprinkle sesame on top and bake for 20-25 minutes.
