Natural No Preservative Energy Bar Perfect for Vegan and Paleo but much more….

My oldest daughter is not a great eater and very picky with food.
But she loves sweets. If she could eat sweets all day she would be in heaven. But she is not.
So every day I try to find creative ways to make her eat healthy food at school.
Until one day I tried something new for one of my kids' baking workshops.
She tried it and LOVED it (I was so lucky she liked it :).
From that day, this is her snack for school. Healthy, Sweet and full of Energy!

Natural Energy Bar

1 cup unsalted nut mix (walnut, cashews, almonds)

1/2 cup pitted dried Medjool dates

1/4 cup dried cranberries

1/4 cup dried apricot

1/4 tsp ground pink Himalayan salt

1/4 tsp ground cinnamon

Put parchment paper in a 9X6in a plastic container, and set aside.

​

Put all ingredients in a food processor for 2-3min. It should turn in into a sticky mix.

Put the mix in the plastic container, press with the back of a glass or with your hands to fit evenly in the container.

Put in the freezer for at least 30 min. After taking it out from the freezer, take the energy bar out from the container using the parchment paper.

​

With a chef knife, cut into rectangles and enjoy your homemade Energy Bar.
 

Keep in the freezer for a month.
