3 Layers Chocolate Cheesecake

Ingredients for the chocolate fudge base:

60gr sugar

60gr heavy whipping cream

125gr chocolate

30gr unsalted butter

1 egg + 1 egg yolk

35gr cornstarch

Ingredients for the chocolate cheese filling:

1 cup powdered sugar

16oz cream cheese

250gr chocolate

100ml heavy whipping cream

Ingredients for the chocolate ganache:

150gr chocolate, preffered at least 60% 

100gr cup heavy whipping cream

Pre heat the over to 340F.

In a pot, over a medium heat, mix the sugar, heavy whipping cream, butter and chocolate to a smooth mix. After you have a smooth mix, let it cool for 10 minutes.

Add the egg and the egg yolk to the chocolate mix and mix well. Add the cornstarch and mix well. Pour into a 9" round baking pan and bake 12-15min.

 

In a microwave safe bowl, melt the chocolate in a 30 seconds pulse to a smooth, shiny mix.
Set aside to cool. In a big bowl with a hand mixer, whisk together the powdered sugar and the cream cheese. Add the melted chocolate and whisk.

In a separate bowl whisk the heavy whipping cream to soft picks.
Gently fold the whipped cream to the chocolate cream cheese mix. Pour the filling on top of the chocolate fudge base and flatten it with the back of a spoon or pallet knife.

Put in the fridge for an hour to stable.

 
In a microwave safe bowl, melt together the chocolate and the heavy whipping cream in a 30 seconds pulse to a smooth, shiny mix. Pour on top of the cake and put in the fridge for at least 2 hours to set. Take out of the fridge, cut and serve!
