White Chocolate Mousse Cake with a Surprise

Ingredients for the chocolate chips base:
1 1/2 cups almond flour
dash of salt
3tbs maple syrup
1/4 cup apple sauce
1/2tsp vanilla extract
1/8 cup 'white chocolate chips
Ingredients for the ice cream filling:
1/4 cup powdered sugar
500gr heavy whipping cream
Ingredients for the white chocolate glazing:
200gr white chocolate
60gr heavy whipping cream

In a large bowl with a wooden spoon mix all the chocolate chip base ingredients except from the chocolate chips, to a soft dough.
Add the chocolate chips mix well. Keep 1/2 cup of the cookie dough aside. Place the rest of the cookies dough in the baking pan and gently press to an even layer. Set aside.

In a big bowl whisk the heavy whipping cream and the powdered sugar to firm picks.
Pour the filling on top of the cookie base and flatten it with the back of a spoon or pallet knife.
From the 1/2 cup of cookie dough that you kept aside, form small balls and gently put inside of the filling of the cake.
Put in the freezer for at least an hour to stable.
In a microwave safe bowl, melt together the white chocolate and the heavy whipping cream in a 30 seconds pulse to a smooth, shiny mix. Set aside to cool for 10 minutes. Pour on top of the cake and put back to the fridge for at least 2 hours to set.
10 minutes before you want to serve the cake, take it out of the freezer and decorate with your favorite fruits.
